A beautifully green salad, which is delicious with the rustic rocket pesto.
Serves 2 (as a side)
8 spears of asparagus
6 -8 stems of broccoli
1/2 red chilli
2-3 teaspoons of Purely rocket pesto
1/2 teaspoon of sesame seeds
salt and pepper to taste
Gently steam the asparagus and broccoli for 2-3 minutes. You want them both to still have a bite. Plunge into cold water.
Chop the chilli finely (deseeded)
Place the asparagus and broccoli on a plate, sprinkle the chilli over the top.
Drizzle the pesto over the top.
Sprinkle the sesame seeds.
Salt and pepper to taste.
