2 portions of Cod fillet

2 slices of Parma Ham

85g Coriander Pesto

4 medium potatoes

A little butter

A splash of cream or milk

squeeze of lemon

Rapeseed oil (just a drizzle)

Salt and pepper to taste

 

  • Heat the oven to 180oC.

  • Peel and cube the potatoes and bring to the boil, simmer for 20 minutes.

  • Wrap the Parma Ham slices around the cod fillets.

  • Place the cod on some greaseproof paper and drizzle some rapeseed oil.

  • Cook for 20-25 minutes. (oven dependent).

  • Check the potatoes are cooked, drain and add the butter and milk/cream. (Keep the mash quite firm as you will be adding the pesto).

  • Stir the pesto through the mash.

  • Season the mash to taste.

  • Check the cod is cooked.

  • Place the mash and cod onto plates.

  • Squeeze some lemon juice over the cod.

  • Eat immediately!

Roast Cod wrapped in Parma Ham with Coriander Pesto Mash

The coriander pesto looks beautiful stirred through the mash and the flavour is delicious, complimenting the fresh fish. This mash is delicious with all white fish.
